We celebrate the beginning of salmon season with new recipes to use in the coming year. Brush up on basic techniques as we prepare Salmon with Peas and Pasta (poaching), Salmon Scallops in Mustard Sauce (braising), Salmon Pot-au-Feu with Anchovy Butter (steaming) and Salmon Cakes Remoulade (sauteing). We will also review the different varieties of salmon, and how to shop for and store them at home.
