It's been 100 years since Marcel Proust ordered this meal for his friends at Ciro's restaurant in Paris: "fillets of sole done in white wine, beef mode (Stroganof), some salad and a lovely, creamy chocolat soufflé". Join us to discover how easily these Belle Epoque recipes can be prepared. You can leave your dressy gloves at home.


Madelaine has been teaching French cooking techniques at Chez Madelaine Cooking School for over 30 years (chezM). She also organizes trips to France to help participants unveil the mysteries of French cuisine.
